Zucchini Bread

From the Kitchen of Milton Stephens

3 eggs, beaten
1 cup oil
2 cups sugar
2 cups grated zucchini
1 tsp. vanilla
3 cups flour
1 T. cinnamon
1 tsp. salt
1 tsp. baking powder
1 tsp. soda
1 cup chopped nuts

Beat eggs; add oil, sugar, zucchini and vanilla. Blend thoroughly. Add dry ingredients; beat until well blended. Add nuts. Pour into 2 well-greased and floured loaf pans. Bake at 325 for one hour.
Yield: two loaves
